Nourishment, Kindness, and Grace—Exactly When We Needed It Most
After months of planning with another chef who assured me she had everything under control, things took an unfortunate turn when she left us in the middle of the retreat, creating a stressful and chaotic situation I never anticipated.
Enter Chef Quetzal—who stepped in with less than 12 hours’ notice and completely transformed the experience.
From the moment he arrived, everything shifted. He brought warmth, calm, and fun into the kitchen, setting the tone with his positive energy and professionalism. He served us a beautiful breakfast that morning—fresh, flavorful, and far superior to what we’d been served earlier in the week. He even took the time to add a happy face to our to-go breakfasts on the final day, which says everything about his heart and attention to detail.
Quetzal catered seamlessly to every dietary request—gluten-free, vegetarian, allergies, and more—all with zero lead time. He finished every remaining meal for the retreat, ran out for last-minute groceries—even navigating a late dinner and early breakfast when the local stores weren’t even open yet—and did it all with ease and grace.
If this is what he can do last-minute, I can only imagine how exceptional the experience would have been if I had hired him from the start. Lesson learned—I’ll be using Chef Quetzal for all of my future retreats.

Best Bartender in Sayulita!
Quetzal and his crew were truly amazing as bartenders for our wedding! We had about 40 guests and they brought 5 workers to man the bar. They were impressively fast at making high quality cocktails - none of my guests had to wait in a line and the drinks were perfect.
We were able to choose 10 cocktails and my guests were raving about every single one! We especially loved the espresso martinis, passion sayulita and passionfruit mojitos, but you truly couldn’t go wrong with any of them. We had the option to choose if we wanted to supply our own alcohol or if we wanted them to bring it. We elected the latter and Quetzal brought high quality tequila for shots without being asked! They went down almost too easily 😂
Quetzal and his crew were also professional and personable, and even were up to have some fun when we invited them to join! Quetzal truly went above and beyond with helping organize our event. Our dessert plans fell through and Quetzal offered a backup dessert plan for us!
If you are looking for a bartender for any celebration, you will not regret working with Alta Mar! Thank you so much Quetzal for all your effort and for fueling our crazy night!

Favorite Experience of Our Trip
